The Australians love highland Cattle, with the first of the breed being imported from Scotland in the middle of the 19th Century, and a second tranche in the 1950’s. Australians also do red wine for red meat, extremely well, and The Heilan Coo is a definite nod to both. Made from 85% Shiraz and 15% Mataro which is the Australian name for Mourvèdre in France and Monastrell in Spain. With the vineyards in Victoria, The Heilan Coo has balance, rich fruit and good structure.
